Not only is it incredibly fast to make, but it can be done in one dish in an air fryer so clean up is a breeze! This is a perfect last minute side for any leftover meat you may have on hand like Smoked Meat Loaf with Cheese, Kamado Joe Smoked Chicken, or even Bacon Wrapped Pork Loin!

You only need a few ingredients to make this dish...

  • Potatoes - Of course you need potaotes for this dish. We suggest using canned sliced potatoes, as they are already cooked and will require less time in the air fryer.
  • Cheese - You’ll need your favorite cheese to make the Au Gratin topping. We recommend a mix of Swiss and Parmesan, but you can use any type you prefer!
  • Seasonings - We recommend using garlic powder, smoked paprika, salt and pepper to season the potatoes.
  • Butter - You’ll need a few tablespoons of butter for the Au Gratin topping.
  • Cream - You need a little cream to make it creamy!

How to Make

Making Air fried canned potatoes Au Gratin is an easy process that can be completed in a few simple steps! Grab a can of sliced potatoes, a few seasonings, and some cheese, you can whip up this delicious dish in no time.

  1. Start by draining your can of potatoes and then cutting them into slices (if they aren't already).
  2. Preheat an air fryer to 350F.
  3. Find a shallow baking dish that will fit in your air fryer and is oven safe.
  4. Spray it and begin layering potatoes  - season each layer and top with some a pat of butter, cream, and cheese. Think potato lasagna!
  5. Repeat process until you have used all of the potatoes. Save some cream and cheese for the top.
  6. Place dish in air fryer, and bake at 350 degrees for 20 minutes, or until potatoes are cooked through

Substitutions for ingredients you may not have at home

While some of us may not have all the ingredients on hand, it never fails I am missing ONE thing so I like to find substitutes for everything.

Cheese is essential for any dish of this nature and can be replaced with almost any variety you would like - parmesan, cheddar, gouda, mozzarella and many more!

When it comes to the canned potatoes themselves, they can easily be swapped out with real potatoes. Just bake an extra few minutes until you can pierce the dish easily!

Tips and tricks on how to get the best results

To achieve the best results when preparing this simple dish, be sure to use the right types of ingredients; use thinly-sliced potatoes instead of cubed, and select a cheese that will go well with the potatoes.

Additionally, you'll want to drain the canned potatoes well before tossing them with seasonings, as excess liquid can make them mushy or prevent them from crisping up properly.

Finally, use quality air fryer pans or liners so that your recipe turns out perfectly!

Corned beef and cabbage is popular around St. Paddy's day but it is a delicious meal that can be eaten anytime! Especially when you smoke it!

While this isn't as fast a cooking Corned Beef in an Instant Pot, it does make the Corned Beef taste AMAZING!

Even better, once you cook it you can use it in Corned Beef Hash Breakfast Wrap and Corned Bbeef Sweet Potato Hash too!

Ingredients

You only need two ingredients to make Smoked Corned Beef and Cabbage - Corned Beef and Cabbage. Add some seasoning and beer and you have a great meal.

You can easily add onions, potatoes, and carrots if you want!

  • Cabbage
  • Mustard
  • Butter
  • Carrots and potatoes (optional)

Instructions

Prepping the corned beef for smoking is insanely easy. It really only takes about 5 minutes to get it ready!

Rinse your corned beef  and soak it in cold water for at least 2 hours or overnight to remove the excess salt.

While the grill is preheating grind the spices in the spice pack in a mortal and pestal or coffee grinder.

Pat the corned beef dry with paper towels and coat the corned beef with the seasoning.

When the smoker is ready, place the corned beef directly on the grill, fat side up.

The Corned Beef should take about 3-4 hours depending on size. While the Corned Beef is smoking, core the cabbage by CAREFULLY cutting the core out at an angle. Keep the stem. Season the inside of the cabbage head with a good dose of Salt, Black Pepper, & Garlic Powder.

If you don't want to try this - just cut it in quarters and cut out the core. Add the ingredients for the cabbage and set aside.

When the Corned Beef reaches 165' F remove it from the grill and put it in a aluminum pan. Add the cored cabbage and the beer. Continue cooking for 1 ½ hrs or until the cabbage is tender.

Equipment

I used a Kamado Joe for this but you can use any kind of smoker or grill. You can use a variety of grills to cook up a delicious Smoked Corned Beef Brisket and Cabbage.

If you’re looking for that classic smoky flavor, then a charcoal smoker or pellet grill is your best bet. For an even easier option, opt for an electric smoker or electric-powered BBQ. No matter what type of grill you choose, make sure it has good temperature control so you can adjust the heat when needed.

Also, keep in mind that this dish cooks best at low temperatures over a longer period of time so your brisket will turn out moist and flavorful!

Storage

This meal is best enjoyed fresh, but it can be stored in an airtight container for up to 3 days. Reheat the brisket and cabbage in a saucepan over low heat until warmed through. If you have leftovers, you can chop the brisket and use it as a sandwich filling or add some vegetables and make a soup with it.

Ingredients
  

  • 3-5 lb corned beef brisket
  • 3 tablespoon corned beef seasoning little packet that comes with the corned beef
  • 1 beer
  • 1 head of cabbage - small or half of large
  • 1 tablespoon mustard
  • 3 tablespoon butter

Optional Spice Mix - if your corned beef didn't come with one!

  • 2 tablespoons Ground Black Pepper
  • 1 tablespoon Garlic Powder
  • 1 tablespoon Ground Coriander Seed
  • 1 teaspoon Onion Powder
  • 2 teaspoons Ground Mustard Seed

Instructions
 

  • Rinse your corned beef and soak it in cold water for at least 2 hours or overnight to remove the excess salt.
  • Preheat your smoker to 225 - add your favorite wood. I liked using Cherry or Apple.
  • While the grill is preheating grind the spices in the spice pack in a mortal and pestal or coffee grinder. Pat the corned beef dry with paper towels and coat the corned beef with the seasoning.
  • When the smoker is ready, place the corned beef directly on the grill, fat side up.
  • Once the corned beef hits 165 remove it and put it in the disposable pan. Should take about 3-4 hours depending on size.
  • Remove the center core of the cabbage by cutting at an angle. Season the inside of the cabbage head with a good dose of Salt, Black Pepper, & Garlic Powder. Add the butter and mustard. Return the core top.
  • Remove the brisket and cabbage in an aluminum pan. Add the beer and extra water so that the liquid is ¾ of the way on the corn beef. Adjust as needed.
  • You can up the temp of your smoker to 275 or use the oven if you want. Continue cooking for 1 ½ hrs or until the cabbage is tender and the brisket is 175'. Although 200' is ideal.

Notes

You can use water or stock instead of beer.

Instructions

The Jameson Margarita is an iconic cocktail that blends together smooth Irish whiskey, tart lime juice and sweet Triple Sec for a perfectly balanced, refreshing drink.

It's easy to make at home - simply combine two ounces of Irish whiskey with one and a half ounces of Triple Sec and one ounce of fresh lime juice in a shaker filled with ice. Shake vigorously for 10- seconds, then strain the mixture into a rocks glass filled with ice. Garnish with a wedge of lime and you've got a classic Jameson Margarita!

This Instant Pot Corned Beef and Cabbage recipe is truly easy and delicious. You will probably never cook Corned Beef another way ever again!

Corned beef and cabbage is a traditional Irish-American dish. The dish typically consists of corned beef, cabbage, potatoes, and carrots. It is often served with Guinness beer.

There are many ways to cook a corned beef, and everyone has their favorites. Mine is to use my Instant Pot. Mainly because it is just easy to cook and clean! Here is my easy fail proof way to cook this meal in an Instant Pot.

Corned beef can be frozen, but it should be consumed within 3-4 months for best quality. To freeze, wrap the corned beef tightly in foil or plastic wrap and place in a freezer bag. Remove as much air as possible from the bag before sealing. Label and date the bag before freezing.

Ingredients
  

  • 1 3 pound corned beef brisket with spice packet
  • 10 small red potatoes
  • 3 medium carrots
  • 1 medium head cabbage
  • 2 tablespoon brown sugar
  • 1 beer - Guinness lager, or ale
  • 1 cup beef stock
  • 1 white onion

Instructions
 

  • Chop up the onion, carrots, cabbage, and potatoes.
  • Set the Instant Pot to Saute.
  • Add one tablespoon of olive oil to the Instant Pot and saute the Corned Beef for 3 minutes on each side.
  • Add the rack and pour in the beer and one cup of beef stock. Put the corned beef on the rack and top with onions,seasoning packet and brown sugar. Set to Instant pot to "MEAT" and cook for 75 minutes. Quick release
  • Top with potatoes and carrots and cabbage. Cook for another 15 minutes using MANUAL. Slow release. If the veggies aren't quite soft enough for your family. Simply add another 10 minutes using MANUAL. Serve and enjoy!

There's a touch of bitterness from the Guinness, there's the salty surprises, and then the uber sweetness of the caramel.  If you are looking for an indulgent show-stopper this just may be it.

Guinness Chocolate Cake with Salted Caramel Turtle Topping

My best friend Kimmie and I came up with this cake late one night and now I think I'll never make any other chocolate cake ever again.  It has everything you want in a chocolate cake.  It's rich, dense and very moist. So if you are looking for a great St. Patrick's Day cake recipe, trust me you will love us for this one!

Why is it called "turtle" cake?

Well, Turtle cake is a take on turtle pie, which is a take on the Delmet's Turtle candy that looks like a cute little yummy turtle. For any dessert to be called "turtle" it must consist of at least three key ingredients: Chocolate, Caramel, and Pecans.  The hardest, or easiest part, of this cake is making the caramel.  The way shown in this recipe is by far the quickest with consistently great results.  The "boil a can of sweetened condensed milk" method used in my Easy Banoffee Pie is also consistently good, but it takes HOURS.  You can always make caramel yourself, which is exceedingly good, but can be difficult to master. It's ALL about the temperature and willpower not to stir.  So you have options, yummy, good, sinfully sweet options.  Pick the one that suits you best and run with it.

Can you use beer in cake?

Yes you can!  And it's delicious!  We chose Guinness for this particular recipe because it makes the cake almost black and those bitter undertones pair so nicely with the chocolate. You can also use wine or spirits to achieve different flavors. I'm actually dying to make this cake using Port but that will have to wait for another day.  If you don't want to use alcohol for personal reasons try using a cup of weak coffee and you will get a slight mocha flavor.

Enough talk - let's make a cake!

Gather your main ingredients: Guinness, butter, cocoa, sour cream, chocolate chips, pecans and a few other things from your pantry.

Guinness Chocolate Cake Ingredients

Preheat your oven to 350. In a medium saucepan heat the beer and butter until all the butter is melted and incorporated.  Add your cocoa and sugar and cook on low until all the sugar is dissolved, stirring constantly. Remove from heat and set aside, While the beer mixture cools a little, whisk the sour cream, eggs, and vanilla until smooth.  Pour in the Guinness mixture and continue to whisk until glossy with no white streaks remaining.  With the mixer on low speed, slowly add the flour and soda in heaping spoons, letting all the dry ingredients mix in completely before adding the next spoon.  Turn the mixer to medium and whisk for two minutes.

Pour half the batter into your prepared cake pan and sprinkle with the chocolate chips and most of the pecans.

Pour the remaining batter on top, give the pan a few light taps to remove any air and pop it in the oven for about an hour (I'd check it at the 45 minute mark)  let cool for about 10 minutes in the pan before flipping to a wire rack to cool completely.

While the cake is cooling make your caramel sauce.  Add the caramels, unwrapped of course, milk and butter to a heavy saucepan and cook over medium heat until the mixture is smooth and creamy.  Stir often during the cooking process and frequently as the sauce is cooling to prevent any film from forming on top.  Conversely, you could place a piece of plastic wrap directly onto the surface of the caramel.

Pour the caramel slowly over the cake to create the nice drizzly drippy look, pouring any excess in the "hole" so you get a gush of caramel when you slice it.  trust me, people are going to want to scoop up the extra.

Garnish with extra pecans and a sprinkle of coarse sea salt and you're all done.  You may want to grab a tall glass of cold milk to go with this one!

Ingredients
  

For the cake:

  • 1 cup Guinness Stout
  • 1 cup KerryGold Butter salted, sliced or cubed
  • ⅓ cup cocoa powder
  • 1 ½ cup+3 Tbs sugar
  • ⅔ cup sour cream
  • 2 large eggs
  • 1 Tbs vanilla extract
  • 2 ¼ cups AP Flour
  • 2 ½ teaspoon baking soda
  • ¼ cup milk chocolate chips
  • ¼ cup pecans + more for garnish chopped fine
  • 1 teaspoon coarse salt for garnish

For the caramel:

  • 1 14 oz bag caramels unwrapped
  • ½ cup evaporated milk
  • ¾ cup butter salted

Instructions
 

Make the cake:

  • Preheat the oven to 350℉
  • Spray a traditional Bundt pan with cooking spray that has added flour
  • Pour the Guinness in a medium pot and add the butter. Meat on medium to medium low heat until the butter is completely melted
  • Add the cocoa and sugar to the pot and stir until the sugar is completely dissolved. Remove from heat and set aside
  • In a large bowl or stand mixer whisk the sour cream, eggs, and vanilla until well incorporated and smooth
  • Add Guinness mixture to the souor cream, egg, and vanilla mixture, mixing until just combined.
  • On low speed, slowly add the flour and soda in small batches until well incorporated
  • Increase speed to medium and whisk for an additional 2 minutes
  • Evenly pour half the batter into the prepared Bundt pan
  • Gently toss the chocolate chips and pecans in a little flour and sprinkle on top of the cake batter
  • Pour the other half of the cake batter into the Bundt pan, then tap lightly on the counter a few times to remove any bubbles.
  • Place the Bundt pan on a baking tray for added stability and bake on the middle rack for 45-60 minutes or until an inserted thin skewer comes out clean
  • Cool in the pan for about 10-15 minutes and turn out onto a cooling rack to cool completely

Make the caramel:

  • While the cake is cooling make the caramel
  • Add all the ingredients to heavy saucepan and melt over medium-low heat, stirring almost constantly
  • Once completely melted, remove from heat and allow to cool for about 15 minutes until thickened. Stir occasionally to keep a film from forming on the top
  • Pour the caramel slowly over the cake to get a nice drizzle effect
  • Garnish with additional pecans and a sprinkle of coarse salt

Notes

I highly recommend using salted butter and the salt garnish.  This cake is very rich and almost cloyingly sweet so the salt cuts that a bit
You can toast the pecans if you like.  Sometimes I do, sometimes I don't.  I happen to like it both ways so this is a personal preference - you do what you like the most.

It's just not Fat Tuesday without a King Cake. This traditional New Orleans Mardi Gras treat is easy to make and just plain delicious.

What is a King Cake?

Yes, Love - It's Fat Tuesday! I love new Orleans - I just  love it.  Some of my best memories are of Bourbon Street, music, friends, and King Cake.  To call it a cake is really a misnomer - it's a cinnamon roll's funner Cajun cousin. 

King Cake supposedly came to New Orleans from France in the late 1800's.  Traditionally a teeny tiny baby doll is placed in the cake.  The person that finds the baby is deemed King for a day.  That's not without its cost though - the finder of the baby has to host the party the following year and provide the King Cake. 

If you found the baby at a party last year and you're now searching for a King Cake recipe you've come to the right place.  So why Purple, Green, and Gold?  Purple is for justice, Green means faith, and Gold represents power - what every good King needs.

Where was the first Mardi Gras?

New Orleans, right?  WRONG!!!  My son is a junior at Spring Hill College (GO BADGERS) in Mobile, AL and he will happily tell you that Mobile had the first Mardi Gras celebration in the New World way back in 1703, just a year after the port city was founded.  New Orleans may claim the biggest party - but it will never be first. 

Mardi Gras, which means “Fat Tuesday” in French, marks the beginning of the 40-day fasting season between Ash Wednesday and Easter. The revelry comes from the practice of celebrating the last night by eating rich, fatty foods before the ritual Lenten sacrifices and fasting begins. In other parts of the world it's known as Shrove Tuesday or Pancake Tuesday.

How do you make a King Cake?

This recipe may have a lot of steps to it, but it's really quite easy.  Except for the colored sugar and maybe the yeast, I bet you probably already have everything you need.  Make sure you use rapid rise yeast in this recipe - using active dry yeast won't work here.  In addition to the rapid rise yeast, you'll just need some staples.  All-purpose flour, sugar, salt, milk, butter and eggs.  For the filling you'll need more butter, cinnamon, and brown sugar - the icing is just powdered sugar, milk, and vanilla.  You'll need the colored sugars for sure because it's just nota King Cake without them - and a little baby if you want to be really traditional!  Let's start with the cake.

Save a cup of the flour for later and combine the remaining 2 cups with the yeast in a stand mixer using the paddle attachment for about 30 seconds.

Then, in a small sauce pan, heat the milk, sugar, and salt until the sugar is completely dissolved.  You'll want the temp to be between 120 and 130 degrees.  With the mixer on low, slowly add the liquid to the flour/yeast mixture.

Scrape any dough off of the paddle attachment and pout on the dough hook.  Mix in the remaining flour until a nice elastic ball is formed that pulls away from the side of the bowl.  If it's too wet, add a little more flour.  If it's too dry, sprinkle with a little water.  Add in the soft (not melted) butter one or two pieces at a time until they are completely absorbed. "Knead" using the dough hook on low for about 8 minutes. Stop every few minutes to scrape the dough hook clean and scrape the sides of the bowl.

Turn the dough out onto a lightly floured surface and knead a few times to remove any air and to make sure it's smooth and elastic.

Lightly spray a medium size bowl with a little cooking spray (or grease the bowl with a little oil), place the dough in the bowl, and spray a little more cooking spray on top.  Cover with plastic wrap  and place in the refrigerator for about an hour, or until doubled in size.  Yes - the fridge.  I know, it goes against all my bread-baking proofing beliefs, but it works.

While the dough is rising, make your filling.  Toss the sugar, cinnamon, and soft butter in a bowl and mix it until it's nice and crumbly.

When the dough has doubled, lightly dust some flour on your work surface and roll the dough out to a 20X10 rectangle.  I'm horrible at rolling so I have to trim off any weird edges.  Sprinkle the filling over half the dough, along the long edge.

Fold the other half of the dough over the side with the cinnamon filling and press down a little so the dough sticks together.

Like I said, trim off any weird edges, as shown above, and then cut the dough into three equal, long strips.  Using a pizza cutter makes this really easy.

Pinch the three strips together at the top then braid them together.  If you need to know how to braid, check out YouTube because I will only confuse you.

Gently stretch the braided dough until it's about 20 inches again, form a circle and pinch the two ends together.  Place it on a cookie sheet lined with parchment paper (or you can grease the sheet if you don't have parchment).

Cover with plastic wrap and let it rise for another hour at room temperature.  If you like, you can brush a little egg wash over the top just before baking to give it a nice golden color once baked. Pre-heat your oven to 350 and bake for about 30 minutes.   It should sound hollow when tapped.  Cool for about 15 minutes then transfer to your serving plate.

While the cake is cooling, make your icing.  You'll need powdered sugar, milk, and vanilla.  Whisk it all together - it's that simple.

Add more milk 1 teaspoon at a time if it's too thick, or more sugar if it's too thin until it forms a nice ribbon.

Spoon the icing over the warm cake and then immediately sprinkle with the colored sugar.  Traditionally it's striped, but have fun with it.  Kids love doing this part!!
