Ingredients

  • 4 cups chicken or vegetable broth
  • 1 cup diced chicken optional but awesome
  • 1 can 15 oz black beans, drained and rinsed (if not already in cowboy caviar or if you want more
  • 1 bell pepper diced
  • 1 onion diced
  • 1 can 15 oz diced tomatoes (with juices)
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1/4 block cream cheese softened
  • optional additions – cooked pasta carrots, celery, olives,

Instructions
 

  • In a large pot over medium heat, saute any uncooked veggies you are using – like pepper and onion. Add leftover cowboy caviar, broth, black beans, and diced tomatoes. Stir to combine.
  • Add cumin, smoked paprika, garlic powder, onion powder, and chipotle powder (if using). Season with salt and black pepper.
  • Bring to a gentle boil, then reduce heat and let simmer for 15-20 minutes, stirring occasionally.
  • Taste and adjust seasoning if needed. Stir in lime juice just before serving.
  • Serve hot, garnished with fresh cilantro. Optionally, top with avocado, shredded cheese, sour cream, or crushed tortilla chips.
