This recipe is quick, budget-friendly, and packed with bold flavors from beans, corn, tomatoes, and peppers. I like to add a little leftover pasta and some olives if I have them! The sweet thing about this soup is you can add just about anything and comes out awesome!
Tips and Tricks:
- Add Protein: If your cowboy caviar doesn’t already have black beans or black-eyed peas, add a can of drained beans for a protein boost. You can also add leftover chicken!
- Broth Choice: Use chicken, beef, or vegetable broth based on your preference. Start with 4 cups and add more if needed.
- Flavor Boost: Enhance the smoky flavor with a dash of cumin, smoked paprika, or chipotle powder.
- Thicken It Up: If you prefer a thicker soup, mash some of the beans with a spoon or add a handful of cooked rice or quinoa.
- Brighten the Flavor: Stir in fresh lime juice and chopped cilantro just before serving for extra freshness.
- Make It Creamy: Add a dollop of sour cream or a splash of heavy cream for a richer texture.
- Top It Off: Garnish with avocado slices, shredded cheese, crushed tortilla chips, or jalapeño slices for extra crunch and heat.
This soup is perfect for repurposing cowboy caviar into a warm, comforting meal—great for chilly nights or an easy weeknight dinner!
