Pasta Machine Fettuccine Alfredo Recipe
Ahh Fettuccine Alfredo...one of the most popular pasta dishes on the menu, and with good reason! The rich cream sauce with bits of Parmesan cheese is a delicious combination. Try it out for yourself in your own kitchen. This recipe makes roughly four servings. A simple, yet traditional Italian dish that will have you and your family coming back for more.
While we used a pasta machine to make the noodles for this recipe - because they are AMAZING. You can use any box noodles or other homemade noodles.
What is Alfredo sauce?
Although alfredo sauce is now used worldwide, it has an interesting history. This white Italian sauce which is now made by many restaurants and used as a base for many dishes is made of butter, cream and Parmesan cheese. The sauce was invented by an Italian restaurateur who wanted to recreate the flavor of the classical fettuccine alla Romana (Roman style) which had been served in his restaurant located on via della Scrofa since 1910.
How to Make Fettuccine Noodles in a Pasta Machine:
If you are using an electric machine like the Phillips Pasta Maker, you simply need to add the flour and water and add the tip for the Fettuccine noodles and start it. In 7 short minutes you will have perfect noodles.
How to Make Fettuccine Alfredo:
1. Take a large pot of water, about halfway full. Add some salt to the water, about 1 tbsp, or to taste. Then add in your fettuccine noodles and cook for approximately 4 minutes (or per package directions).
2. When you drain out the water from the pasta pot, make sure to reserve a cup of the pasta water.
3. Preheat your oven to 350. Grab a cast iron or an oven proof pan. Season the chicken and heat up the cast iron. Saute your chicken for a few minutes on each side and then place in the heated oven. Cook for 10 minutes.
4. While the chicken is cooking. you can start by making your cheese sauce in a separate pan on medium heat.
5. Melt the butter and add the flour. Stir until combined. Slowly stir in half of the milk. Add the cheese and stir to combine. Keep adding the rest of the milk until you get the thickness you want. Chop up the chicken and add it to the sauce mix.

Tips for Making Great Fettuccine Alfredo
- You should use high quality cheeses for this recipe! Cheap or low quality cheeses will not melt as well, and may alter the taste. Also, make sure you have a tight fitting lid on your pot of boiling water! This helps to create steam to cook the pasta faster.
- Use whatever type of noodles you like best. Some options are linguine, penne, fusilli, or spaghetti noodles! You can also add in some other items like broccoli florets, peas, mushrooms, or whatever else you like.
- The butter adds a richer taste to the sauce. If you want to be healthier, then try using olive oil instead of butter. Butter tastes better in my opinion, but you may like olive oil more! The choice is yours!
- You can mix in spices to the sauce if you want. Some ideas are basil, oregano, thyme, or rosemary. Just make sure you add these when you add in your salt and pepper for flavoring.
