water

distilled white vinegar

apple cider vinegar / rice wine vinegar

maple syrup or honey

fine sea salt

Instructions
Trim the onion - remove the skinIf they are large cut them in half - small leave alont
Pack the onions into mason jars
Place the jar in the sink, to catch any splashes of hot vinegar later.
In a small saucepan, combine the water, both vinegars, maple syrup, salt, and pepper flake.
Bring the mixture to a gentle simmer over medium heat, then carefully pour the mixture into the jar over the onions.
Use a spoon to press the onions down into the vinegar. Add the lid.
Let the pickled onions cool at room temperature.
Keep in the refrigerator. Use within 3 weeks.
