Fire up the grill. Slice the pineapples in half and grill for about 10 minutes. Let stand until cool.
Meanwhile, coat the corn, peppers in olive oil and add them to the grill. The corn will take about 20 minutes. You can precook it a little in an instant pot or microwave to speed up the process.
At the same time, roast the peppers until charred.
When they are about done, skewer the shrimp and grill. Or if using scallops too you can use a cast iron to sauté them both together. Cook for about 10 minutes.
While they are cooking core the pineapple and get as much out of the center as possible.
Cut the pineapple into chunks and discard the core. Save some juice. In a bowl combine all of the ingredients including the pineapple juice and mix.
