OR 1 tsp smoked paprika1/2 tsp cayenne, 1/2 tsp thyme **Add all if you like a little spice!!

1bay leaf
1tspsalt and freshly ground black pepper
Instructions
Put the beans in a pot and cover with water by about an inch. Bring to a boil and cook for 2 minutes. Drain, set aside
Heat bacon grease in a pot on medium heat, add garlic and onion saute until translucent (about 5-7mins)
Throw in carrots - stir occasionally - let cook for another 3 minutes
Add ham/sausage if you're using them now, stir well. Cook for 3 or 4 more minutes
Season with salt and pepper Add cajun seasoning , bay leaf, liquid smoke , smoked paprika/cayenne etc
Stir and let cook for another 2 minutes - making sure everything is mixed well. Pour in chicken stock bring to a boil
Reduce heat to low. Add white beans Cover and let simmer for about 1 hour - stirring every 15 to 20 minutes. Add more if necessary.
After 60 mins add butter and stir through Remove from heat. Now, your beans should be cooked through. You can serve then with some fresh hot cornbread!!
