Trim off any extra fat. Coat with salt and pepper and let rest in the fridge uncovered for at least 2 hours. Then remove an hour before cooking so it can come to room temp.
Preheat your smoker to 225°F
Cook for 1 hour and spritz every hour after that. It should take about 3 hours for it to get to 165°F. Remove from the smoker.
Wrap it with butcher paper and then a layer of foil, and put it back on the smoker for another hour.
Cook until the internal temp is 210°F
Remove and let it rest for 45 minutes under a foil tent. Then slice and serve!
