2medium sweet potatoespeeled and cut into 1-inch cubes
1medium onioncut into thin slices

Instructions
Preheat your oven to 350′ F.
Cut the pork tenderloin in half so it will fit in your cast iron skillet.
Add one tablespoon of butter to cast iron to melt it. Once it is melted add the onions. Let them cook for a few minutes.
While they are cooking, mix brown sugar and seasonings in large bowl. Reserve 2 tablespoons. Add sweet potatoes, onions and butter to bowl; toss to coat well.
Rub pork tenderloin with reserved seasoning mixture.
Flip the onions and place the pork tenderloin on top of the onions. Then surround the pork loin with the sweet potatoes.
Bake for 30 minutes or until the pork is 165′ F. Remove and let sit a few minutes before slicing and serving.
