Jimmy John’s Chicken Philly Sandwich

Ingredients

hoagie rolls or sub sandwich rolls
1
tablespoon
olive oil
1
small onion
thinly sliced
1
small green bell pepper
thinly sliced
1
small red bell pepper
thinly sliced
2
cups
cooked chicken breast
thinly sliced or shredded
1
teaspoon
garlic powder
Salt and pepper to taste
4
slices
provolone or white American cheese
Optional: mayo
banana peppers, pickles, or vinegar/oil dressing
Instructions
Heat olive oil in a skillet over medium heat.
Add onions and peppers. Cook until soft and slightly caramelized, about 6–8 minutes.
Add chicken to the skillet with garlic powder, salt, and pepper. Stir to heat through.
Divide the mixture into two piles in the skillet and top each with 2 slices of cheese. Let melt slightly.
While cheese is melting, lightly toast the rolls (open-faced under the broiler works great).
Spread mayo or preferred condiments on the rolls.
Scoop the cheesy chicken and pepper mix onto the rolls.
Add any extra toppings like pickles or banana peppers if you’d like.
