Ingredients
  

  • 1 extra large sweet potato cooked and mashed
  • 1 stick butter melted
  • ½ cup sugar
  • ½ cup brown sugar
  • 2 eggs
  • ¼ cup evaporated milk
  • 1 Tbs AP flour
  • ½ tsp pumpkin pie spice or nutmeg
  • ½ tsp vanilla extract
  • Pastry for a 9” deep-dish pie

Equipment

  • 9" deep-dish pie plate or tin

Method
 

  1. Preheat oven to 350 ℉
  2. Stir butter into the sweet potatoes
  3. Add sugar and mix until smooth
  4. Add eggs one at a time, beating well between each
  5. Add remaining ingredients and mix thoroughly
  6. Pour evenly into pie shell and bake for 1 hour
  7. Cool completely before serving
