large flour tortillas
4
eggs
avacado
1
cup
shredded cheese
cheddar, mozzarella, or your choice
Salt and pepper to taste
Optional toppings: salsa
sour cream, chopped herbs
Instructions
Preheat your pan on the stove on medium heat
Place the tortillas on a cutting board and cut the hole in the middle with a cup or cookie cutter
Melt butter in the pan and swirl it around to fully coat the pan
Add one tortilla and coat with butter - cook for 30 seconds and flip
Crack an egg into the center of each tortilla, making sure it stays contained within the tortilla.
Season with salt and pepper to taste.
Flip the tortilla with the egg in it - use a large spatula to keep it together
Sprinkle the shredded cheese over the tortillas - add the avacado (or sausages and vegetables if using)
Cook for another few minutes. Flip one third towards the middle and repeat with the other side. Flip and serve
Garnish with your favorite toppings such as salsa, sour cream, or chopped herbs.
