The chicken is best if it is 1 inch or less thick, cut in half to get it thinner if necessary.
Tenderize the chicken and season with salt pepper and italian seasoning.
Marinate the chicken in 1/2 of the oil, honey and basalmic. 30 minutes is good, overnight is best.
Heat up a pan or cast iron and get it hot. Add 1tsp of olive or avacado oil and cook the chicken 3 minutes on each side or until internal temp reaches 165. Pull and let it rest.
Arrange the mixed greens on a large serving platter or individual plates or bowls
Scatter the cherry tomatoes and cucumber over the greens.
Dice the chicken and spread it on top.
Then place the burrata cheese balls in the center of the salad, keeping them whole or gently tearing them open for a rustic look. You can also dice them for easier eating.
Mix the rest of the balsamic, the honey mustard together and drizzle over the salad!
