Small Keto Pizza Crust with King Arthur Keto Wheat Flour

I don’t know about you, but hubby and I don’t need a giant pizza anymore. Most of the time, we just want enough for dinner without a bunch of leftovers. Or even better — a breakfast pizza!

This keto pizza crust uses King Arthur Keto Wheat Flour and makes one approximately 8 to 10-inch pizza, which is just the right size for the two of us.

Unlike a lot of keto crusts, there’s no cauliflower, almond flour, or pile of cheese holding everything together. It’s an actual yeast dough, so you get something much closer to traditional pizza crust.

Tips for Making Keto Pizza Dough

Add the water slowly. Keto wheat flour doesn’t behave exactly like regular flour. Start with 1/2 cup and add more only as needed.

Give it time to rise. It may not puff up quite like traditional pizza dough, but the yeast still helps with the texture and flavor.

Par-bake the crust. Baking the crust for a few minutes before adding toppings helps keep the middle from getting soggy.

Don’t overload it. Since this is a small pizza, a little sauce and cheese go a long way.

For a crispier crust, put a cast iron skillet or pizza stone in the oven while it preheats. Transfer the pizza and parchment onto the hot surface for the par-bake. The extra heat underneath helps give the keto crust a much better bottom.

How much does a keto crust cost to make?

I was floored by how expensive this flour was. BUT you get to do quite a bit with it if you are careful. At $12 per bag:

  • Bag = $12
  • 15 × ¼-cup servings = 3¾ cups flour
  • Recipe uses 1 cup = $3.20 worth of flour
  • Makes 2 pizzas
  • Flour cost = $1.60 per pizza

So the Keto Wheat Flour costs about $1.60 0 per pizza crust.

Not bad at all for an 8–10″ keto pizza, especially compared with buying a prepared keto crust.

Ingredients
  

  • 1 cup King Arthur Keto Wheat Flour
  • 1 packet instant yeast or 1 tsp
  • 1/2 teaspoon salt
  • 1/2 teaspoon honey optional
  • 1/2 to 2/3 cup warm water
  • 1 tablespoon olive oil

Instructions
 

  • Add the keto wheat flour, instant yeast and salt to a mixing bowl and stir to combine.
  • Add 1/2 cup warm water and the olive oil. Mix until a dough begins to form.
  • If the dough seems dry, add additional warm water 1 tablespoon at a time until you have a soft, slightly tacky dough. Divide into two balls
  • Knead the dough for about 3–4 minutes.
  • Place the dough in a lightly greased bowl, cover and let rise in a warm spot for 45–60 minutes.
  • Preheat the oven to 450°F.
  • Press or roll the dough into an approximately 8 inch circle on parchment paper. Poke holes in the crust. You get two crusts from this.
  • Par-bake the plain crust for 5–6 minutes.
  • Remove it from the oven and add a thin layer of pizza sauce, shredded mozzarella and your favorite low-carb pizza toppings.
  • Return to the oven and bake for another 7–10 minutes, or until the cheese is melted and the crust is browned to your liking.
  • Let it sit for a couple of minutes before slicing.
