Low-Carb Chicken and Dumplings (Made with Keto Wheat Flour)

Low Carb Chicken and Dumplings

I grew up loving homemade chicken and dumplings. There’s just something about tender chicken, rich broth, and homemade dumplings that tastes like comfort food. But as much as I love them, I’ve never been crazy about how heavy traditional dumplings can be. Not to mention all those carbs!

Now, I’m not going to tell you these are authentic, old-school Southern dumplings. They’re not. But these low-carb chicken and dumplins are dang close! And if you’re craving a big bowl of chicken and dumplings without all the carbs, these will definitely do the trick.

I made these using King Arthur Keto Wheat Flour, and they turned out surprisingly light without that heavy, doughy feeling. This is also a great way to use up leftover smoked chicken.

Best of all, they’re approximately 9 grams of net carbs per serving, depending on your ingredients and how much extra flour you use!

Tips for Making Low-Carb Chicken and Dumplings

  • Don’t expect traditional dumplings. These have a slightly different texture, but they’re a great lower-carb substitute when you’re craving comfort food.
  • Let the dough rest. About 10 minutes gives the keto flour time to absorb the moisture.
  • Add a little sour cream. Just a teaspoon helps soften the dough.
  • No rolling pin needed! Divide the dough into four portions, flatten each with your hands, and cut into squares.
  • Use extra flour sparingly. A little keto flour keeps the dough from sticking while you flatten it.
  • Simmer them covered. The dumplings may look done after a few minutes, but they need a little longer to cook through. Keep the broth gently bubbling and cover the pot.
  • Use leftover smoked chicken. It adds a delicious smoky flavor, but rotisserie or roasted chicken works too.
  • Don’t forget the thyme! It adds that classic homemade chicken-and-dumplings flavor.
