The Waldorf Salad is a classic American dish that originated in the late 19th century at the Waldorf-Astoria Hotel in New York City. Known for its refreshing and crisp combination of apples, celery, and walnuts, this salad has been a beloved staple for generations.
It’s often served as an appetizer or a light side dish for Chicken Gyro, Lightly Fried Grouper Sandwich, or Turkey and Cheese Roll Ups. Or this version could easily be a main course by adding diced chicken!
I first had one in a relatively odd spot – the Chocolate Emporium in Orlando. They altered the classic recipe some to include chicken and a few other things. This is my take on their version of it. As you know the classic doesn’t get mixed with lettuce. This one does to create a super easy light salad!

Easy Waldorf Salad w/ Chicken

Ingredients
- 1 large apples Granny Smith or Red Delicious, cored and diced
- 1 cup chicken diced **optional
- 1 cup celery chopped
- 1 cup seedless grapes halved
- 1/2 cup walnuts and cranberries
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Lettuce leaves shredded
Instructions
- In a large bowl, combine the mayonnaise, lemon juice, salt, and pepper. Mix well until smooth.
- Add the diced apples, chopped celery, halved grapes, and chopped walnuts. Mix with the dressing to coat evenly.
- Add the lettuce and toss if serving immediately. Wait to combine if serving later.
- Optionally, garnish with additional chopped walnuts or a sprinkle of fresh herbs.
- For the best flavor, chill the salad in the refrigerator for about 30 minutes before serving.
