  • 1 pound skinless chicken breasts or thighs boneless
  • 1 onion medium – diced
  • 2 carrots peeled and sliced
  • 2 celery stalks sliced
  • 3 garlic cloves minced
  • 6 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • 3/4 cup orzo pasta
