Best beer for corned beef?

There is no one “best” beer for corned beef. The beer you use will alter the flavor some. Using the traditional Guinness will give it a more stoutly flavor. Use a lager or ale will be a little lighter.

Does beer tenderize corned beef?

Yes, beer can tenderize corned beef. The enzymes in beer help to break down the tough proteins in the meat, making it more tender. Marinating corned beef in beer overnight can help to further tenderize the meat. When cooking, use a light beer so that it does not overpower the flavor of the corned beef.

What can I substitute for beer in corned beef?

If you do not want to use beer, you can substitute apple cider or white wine. These will also help to tenderize the corned beef. However, they will also add their own flavors to the dish, so it is important to taste it before serving. If these substitutes are not to your liking, you can also use chicken or vegetable broth as a marinade. Some people even use sodas like Coke or Dr. Pepper. Like I said, the liquid you use will alter the flavor by increasing sweetness or tartness. Use something YOU like and it should be OK.
