Whenever I make a big batch of mojo pork, I know we’ll enjoy Cuban sandwiches for a day or two. After that, I’m always looking for something completely different so it doesn’t feel like we’re eating the same leftovers.

This Leftover Mojo Pork Fried Rice has become one of our favorites. The crispy pork, colorful vegetables, and perfectly fried rice come together in one skillet for a quick, flavorful meal that’s ready in about 20 minutes.

Tips

  • Use cold, day-old rice for the best fried rice texture.
  • Crisp the mojo pork before adding it back to the rice for extra flavor.
  • Cook over medium-high to high heat so the rice develops those delicious crispy bits.
  • Don’t overcrowd the pan or the rice will steam instead of fry.
  • Add the soy sauce near the end to keep the rice from becoming mushy.
  • Customize it with whatever vegetables you have in the refrigerator.

Leftover Mojo Pork Fried Rice

Ingredients

  • 4 cups cold cooked white rice
  • 2 cups leftover mojo pork, chopped
  • 2 tablespoons butter or bacon grease
  • 1 small onion, diced
  • 2 carrots, peeled and diced
  • 1 bell pepper, diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 3 cloves garlic, minced
  • 3 green onions, sliced
  • 3 tablespoons soy sauce
  • Fresh cracked black pepper, to taste

Instructions

  1. Heat a large skillet, wok, or Blackstone over medium-high heat. Add the butter or bacon grease.
  2. Add the chopped mojo pork and cook until browned and crispy around the edges. Remove and set aside.
  3. Add the onion, carrots, and bell pepper. Cook for about 5 minutes until the vegetables begin to soften.
  4. Stir in the garlic and cook for another 30 seconds.
  5. Add the peas and corn and cook for 2 minutes.
  6. Add the cold rice, breaking up any clumps. Let it cook for 1 to 2 minutes before stirring so it begins to crisp.
  7. Return the crispy mojo pork to the pan and toss everything together.
  8. Pour in the soy sauce and continue cooking until everything is evenly coated and heated through.
  9. Season with black pepper, stir in the green onions, and serve hot.

Serving Suggestions: Top with a fried egg, sliced avocado, fresh cilantro, or a drizzle of sriracha. Serve with egg rolls, potstickers, or a simple cucumber salad for a complete meal.
