Low-Carb Chicken and Waffle Sandwiches
I LOVE Southern food. Fried chicken, biscuits, gravy, waffles — pretty much all the good stuff that comes with a ridiculous amount of carbs! We’ve been trying to cut back on carbs around here, but I’m not about to give up all my favorite foods.
One thing that’s made it so much easier is King Arthur Keto Wheat Flour and their Keto Pancake Mix. I’ve been experimenting with both, and I’m seriously impressed with how well they work. They’re not exactly cheap, but being able to make some of our favorite foods with fewer carbs makes them worth keeping around.
These Low-Carb Chicken and Waffle Sandwiches are a perfect example!
I used King Arthur Keto Pancake Mix to make the waffles and gluten-free Springer Mountain Farms chicken breasts for the filling. The result is a crispy, savory chicken and waffle sandwich that’s filling, delicious, and surprisingly easy to make.
And here’s what I really like about this recipe: you can make it two different ways!
Make two full sandwiches using four waffle halves and two chicken breasts, or turn them into four open-faced chicken and waffle sandwiches. Personally, I think the open-faced version is easier to eat. You get all that chicken and waffle goodness without trying to fit a giant sandwich in your mouth!
I drizzled a little real honey over ours because I love that sweet-and-savory combination. If you’re following strict keto, skip the honey or use a sugar-free syrup instead.
Tips for Making the Best Low-Carb Chicken and Waffles
Make extra waffles and freeze them. This is one of my favorite shortcuts! Make a whole batch, let them cool, and freeze them with parchment paper between each waffle. Pop one in the toaster whenever you need a quick breakfast or sandwich.
Toast your waffles before assembling. Even freshly made waffles benefit from a little extra crispiness. A quick trip through the toaster helps them hold up to the chicken and toppings.
Use thin chicken breasts. If your chicken breasts are thick, slice them horizontally or pound them to an even thickness. They’ll cook faster and fit much better between the waffles.
Don’t overcook the chicken. Chicken breasts can dry out quickly. Cook until the thickest part reaches 165°F, then let them rest a few minutes before serving.
Fun Ways to Change Up Your Chicken and Waffle Sandwiches
There are so many ways to dress these up depending on what you’re in the mood for!
- Bacon & Cheddar: Add crispy bacon and a slice of sharp cheddar cheese. A little sugar-free maple syrup is fantastic with this combination.
- Chicken & Egg: Top with a fried egg and let that runny yolk become your sauce. This one is especially good for breakfast.
- Hot Honey Chicken: Mix a little hot sauce with honey for a sweet-and-spicy drizzle. Use sugar-free syrup instead of honey to keep carbs lower.
- Buffalo Chicken: Toss the cooked chicken in buffalo sauce and add a little ranch dressing.
- Southern Gravy: Skip the syrup and spoon some low-carb sausage gravy over the chicken and waffles.
- Pimento Cheese: Spread a little pimento cheese on the waffle before adding the chicken. Very Southern and SO good!
- Chicken BLT: Add crispy bacon, lettuce, tomato, and a little mayo.
- Jalapeño Ranch: Top with sliced jalapeños, pepper jack cheese, and ranch dressing.
- Breakfast Sandwich: Add scrambled eggs, bacon, and cheese for a hearty breakfast you can eat on the go.
You can even skip the chicken altogether and use your leftover waffles for breakfast sandwiches with eggs, sausage, or bacon.
