Ingredients
- 1 burrata cheese
- 4 cups mixed greens arugula, spinach, or spring mix
- 1 cup cherry tomatoes halved
- 2 chicken breast
- 1/2 tsp Italian seasoning
- 1 cucumber
- 1/4 cup of honey mustard
- ½ cup fresh basil leaves
- 2 tbsp olive oil
- 1/2 cup balsamic vinegar
- 3 tbs honey
- Salt and freshly ground black pepper to taste
- Optional: dried cranberries with pecans
Instructions
- The chicken is best if it is 1 inch or less thick, cut in half to get it thinner if necessary.
- Tenderize the chicken and season with salt pepper and italian seasoning.
- Marinate the chicken in 1/2 of the oil, honey and basalmic. 30 minutes is good, overnight is best.
- Heat up a pan or cast iron and get it hot. Add 1tsp of olive or avacado oil and cook the chicken 3 minutes on each side or until internal temp reaches 165. Pull and let it rest.
- Arrange the mixed greens on a large serving platter or individual plates or bowls
- Scatter the cherry tomatoes and cucumber over the greens.
- Dice the chicken and spread it on top.
- Then place the burrata cheese balls in the center of the salad, keeping them whole or gently tearing them open for a rustic look. You can also dice them for easier eating.
- Mix the rest of the balsamic, the honey mustard together and drizzle over the salad!
- Top with cranberries and pecans if you desired!
