This old fashioned lemon pie is just that. Sure it’s easy to buy a lemon pie in the grocery store freezer section or order one from your local bakery, but making it yourself is rewarding and delicious! It’s also not very difficult or time consuming at all which makes this recipe even better.

Fresh squeezed Meyer lemon juice gives this Creamy Meyers Lemon Pie recipe its amazing flavor (you can use regular lemons too!). The creamy filling is made with sweetened condensed milk instead of cream. You’ll enjoy this homemade old fashioned lemon pie at any summer picnic or family dinner.

Ingredients
  

Pie Filling

  • 1 cans full-fat sweetened condensed milk
  • 1/2 cup fresh lemon juice about 3 lemons
  • 3 large egg yolks
  • 1 premade pie crust

Meringue topping

  • 3 egg whites room temperature
  • 1/4 teaspoon cream of tartar
  • 6 tablespoons sugar
  • 1/2 teaspoon vanilla

Instructions
 

  • Preheat oven to 350°F
  • Add the condensed milk, lemon juice, and egg yolks to your stand mixer and beat until thoroughly combined.
  • Pour into the crust.
  • Bake the pie for 18-21 minutes until it is set
  • Increase oven temp to 425°F
  • Beat egg whites in medium bowl with electric mixer until frothy.
  • Add cream of tartar and beat until soft peaks form.
  • Gradually beat in sugar, 1 tbsp at a time, until sugar is dissolved and stiff, glossy peaks form.
  • Spread over pie filling
  • Bake pie in oven until tips of meringue are golden brown, 4 to 5 minutes.
  • Remove from the oven and allow to cool completely on a wire rack. Once cool, cover and chill for at least 1 hour (and up to 3 days) before serving.
  • Garnish as desired. Store leftovers in the refrigerator for up to 1 week.
