Jimmy John’s Chicken Philly Sandwich
Ingredients
- 2 hoagie rolls or sub sandwich rolls
- 1 tablespoon olive oil
- 1 small onion thinly sliced
- 1 small green bell pepper thinly sliced
- 1 small red bell pepper thinly sliced
- 2 cups cooked chicken breast thinly sliced or shredded
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 slices provolone or white American cheese
- Optional: mayo banana peppers, pickles, or vinegar/oil dressing
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onions and peppers. Cook until soft and slightly caramelized, about 6–8 minutes.
- Add chicken to the skillet with garlic powder, salt, and pepper. Stir to heat through.
- Divide the mixture into two piles in the skillet and top each with 2 slices of cheese. Let melt slightly.
- While cheese is melting, lightly toast the rolls (open-faced under the broiler works great).
- Spread mayo or preferred condiments on the rolls.
- Scoop the cheesy chicken and pepper mix onto the rolls.
- Add any extra toppings like pickles or banana peppers if you’d like.
