  • 2 celery stalks chopped
  • 2 carrots chopped
  • 3 garlic cloves

  • 1/2 teaspoon black pepper
  • 4 cups turkey meat shredded (from the carcass or leftovers)
  • 1 tablespoon olive oil or butter
  • 1 large onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 28 oz can crushed tomatoes
  • 2 cups chicken or turkey broth reserved from the homemade broth
  • 1 cup barbecue sauce
  • 1 tablespoon Worcestershire sauce
  • 2 cups frozen or canned corn
  • 1 cup frozen or canned lima beans
  • 1 cup of okra optional
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper optional, for heat
  • Salt and pepper to taste
  • Hot sauce to taste (optional)

  • Place the turkey carcass in a large stockpot. Add water, onion, celery, carrots, garlic, bay leaf, salt, and pepper.

  • Strain the broth through a fine mesh strainer, discarding the bones and vegetables. Reserve 2 cups for the stew and freeze the rest for future use.
  • In a large pot or Dutch oven, heat olive oil or butter over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes. Add garlic and cook for 1 minute until fragrant.
