What Is Eggs Rockefeller?
Think of it like a cross between a baked egg dish and a savory spinach dip—typically made with eggs, spinach or greens, and a creamy base. It’s often served in ramekins, muffin tins, or even spooned into hollowed-out bread or veggie cups.

The classic version is decadent, but it’s super easy to tweak into something healthier without giving up flavor.


Healthy Swaps & Tips:

  • Use Egg Whites or a Mix: Sub in egg whites for part (or all) of the whole eggs to cut cholesterol and fat, especially if you’re adding cheese or bacon.
  • Add Cottage Cheese: Instead of cream or heavy cheese, mix in low-fat cottage cheese. It adds creaminess, protein, and just enough tang.

Ingredients
  

  • 3 eggs
  • 1/8 cup milk
  • 1 link sausage or bacon
  • 1/2 cup chopped spinach
  • 1 clove garlic
  • 1/4 small onion
  • Parmesan cheese
  • salt and pepper
  • chives

Instructions
 

  • Put non stick spray in your pan.
  • Mix the egg and milk together until combined. Add salt and pepper. Mix again.
  • Add garlic and onion and saute until tender, add spinach and sausage. Cook another 3 minutes.
  • Move the mixture to the side and spray the pan again, then move it to the other side and spray the other side to ensure the eggs don’t stick.
