Mexican Manicotti is a delicious dish that combines Mexican spices with Manicotti noodles to create an amazing Mexican stuffed shells recipe. This meaty Manicotti recipe is easy to make and it tastes just as good as it looks!
How to Make Mexican Manicotti
Heat a skillet and add the ground beef – season with cumin, paprika, garlic, salt, pepper, white pepper, chili powder.
In a large bowl mix the meat, beans, 1/4 cup cheese, and corn. Stir to combine. Take one shell and push it into the bowl of meat and bean mixture gently to fill it.
Then flip it and repeat. Repeat until it is full.
Spray your dish with non stick spray. Use two tablespoons of salsa to cover the bottom. Start adding the filled shells – one level only. Once the dish is full. Top with salsa and then pour in one cup of water.
Should barely cover the top of the shells if not add a little more.
Cover with foil and bake in 350 degree oven for 1 hr to 1 1/2 hrs or until the shells are soft. When shells are done and dish is bubbly top with sour cream, reserved cheese and olives. Put back in oven for 5-10 minutes. Enjoy!

- 1 can refried beans
- 1/2 cup corn
- 1/2 tsp cumin
- 1/4 tsp white pepper

- 1 cup sour cream
- 2 green onions diced
- 1/4 cup diced black olives optional
- 1 box manicotti shells
- 1 cup of water
