Southern White Acre Peas w/ Ham
This recreates the taste and textures I remember well from my childhood. The original recipe made for an extended cooking time in a conventional pot on top of the stove, but it’s no problem at all with the pressure cooker.
Rinse your peas and pull out any bad ones. You only want the pretty peas ๐
Dice your ham, garlic and, onion. Heat 2 tbsp of butter. Add the onion. Saute until tender. Add the ham and saute a few minutes longer. Season everything. Add the beans and stock. Bring to boil. Turn the heat down to low and cook for 45 minutes.

- 1 cup onion diced - medium
- 1 can bag of dried field peas - or 3 cups fresh
- 2 tbsp of butter
- 1 pound ham hock with some leftover ham
- 4 cups chicken stock
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp cumin
- 2 bay leaves
- 1/2 tsp thyme
- 1/2 tsp white pepper
Instructions
