Sprimp Pineapple Bowl

These WOW people at parties! Last time I made them they were gone in minutes. Really light and flavorful.

These take a little work but they truly are fun to serve. This recipe cooks everything on the grill so you need to watch it which can be tricky if you are entertaining too. If you don’t want to be tied to the grill you could pre-make just about everything. Then just grill the pineapples and fill at the party!

BUT if you want to create the entire thing at once….here’s how!

Fire up the grill. Slice the pineapples in half and grill for about 10 minutes. Let stand until cool.

Meanwhile, coat the corn, peppers in olive oil and add them to the grill. The corn will take about 20 minutes. You can precook it a little in an instant pot or microwave to speed up the process.

At the same time, roast the peppers until charred. When they are about done, skewer the shrimp and grill. Or if using scallops too you can use a cast iron to sauté them both together. Cook for about 10 minutes.

While they are cooking core the pineapple and get as much out of the center as possible. Cut the pineapple into chunks and discard the core. Save some juice. In a bowl combine all of the ingredients including the pineapple juice and mix. Fill each pineapple boat and serve!

  • 1 small mango diced
  • 2 peppers *any color
  • 1 small red onion diced
  • 2 tbsp olive oil
