Cast Iron Smoked Potatoes AuGratin are perfect add on when smoking just about any meat. They are made with thinly sliced potatoes, cheese, and a creamy sauce that is perfect for any occasion.
This really is an easy dish and perfect to make when smoking a prime rib or smoked bacon wrapped pork tenderloin. Takes a few minutes to assemble and then you just throw it in the smoker with your meat!
Slice the potatoes thin. The thinner the better. Heat the butter in the cast iron. In a large bowl, combine cheddar cheese, cream, garlic powder, onion powder, salt and pepper.
Stack the potatoes in the pan and pour the mixture on top. Then top with the cheese slices or other cheese. Feel free to use any cheese you have one hand. Pretty much any cheese with work for this meal. As you can see, I used the Provolone I had 🙂
Cook for at least 25-30 minutes at 300 or higher or until potatoes are tender and golden brown. You can also cook longer at a lower temp. Takes about an hour at 250. Use a fork to determine doneness.

- 6 large russet potatoes peeled and sliced into thin rounds
- 1/4 cup butter melted
- 1 cup grated cheddar cheese
- 6 slices of provolone or other cheese of preference
- 1/2 cup heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Kosher salt and freshly ground black pepper to taste
