  • Preheat your smoker to 225°F (110°C) using your preferred wood chips for smoking (hickory or mesquite work well for this recipe).
  • In a large skillet, cook the ground beef or Italian sausage over medium heat until browned. Add the chopped onion and minced garlic, and cook until the onion is softened.
  • Stir in the crushed tomatoes, tomato paste, dried basil, dried oregano, salt, and pepper. Simmer the sauce for about 10-15 minutes, allowing the flavors to meld together. If you’re using smoked vegetables, you can add them to the sauce now for additional flavor.
