Equipment

  • Slow cooker/Crockpot

Ingredients
  

  • 1 to pound Andoiulle or any other sausage
  • ½ bag black beans or 2 cans
  • ½ cups onion chopped
  • ½ cups green bell pepper chopped
  • 2 cloves garlic minced
  • 1 teaspoons leaf thyme
  • ½ teaspoons leaf oregano
  • ¼ teaspoons white pepper
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • 2 bay leaves
  • 1 large tomato diced
  • 1 cup chicken broth
  • 2 tablespoon tomato paste
  • 1 cup precooked rice

Instructions
 

  • Brown the sliced sausage in a heavy skillet over medium heat.
  • Drain fat and transfer the sliced sausage to the crock pot.
  • Combine remaining ingredients with sausage in the crock pot.
  • Cover and cook on LOW for 7 to 9 hours, or on HIGH for 3 ½ to 4 ½ hours.
  • Remove bay leaves.
  • Serve with hot cooked rice, if desired.
  • Enjoy!
