This Black Beans & Rice w/ Andouille sausage meal is perfect for a cold winter night. It is very easy to make and it will surely warm you up.

Ingredients
- 1 to pound Andoiulle or any other sausage
- 1/2 bag black beans or 2 cans
- 1/2 cups onion chopped
- 1/2 cups green bell pepper chopped
- 2 cloves garlic minced
- 1 teaspoons leaf thyme
- 1/2 teaspoons leaf oregano
- 1/4 teaspoons white pepper
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 2 bay leaves
- 1 large tomato diced
- 1 cup chicken broth
- 2 tbsp tomato paste
- 1 cup precooked rice
Instructions
- Brown the sliced sausage in a heavy skillet over medium heat.
- Drain fat and transfer the sliced sausage to the crock pot.
- Combine remaining ingredients with sausage in the crock pot.
- Cover and cook on LOW for 7 to 9 hours, or on HIGH for 3 1/2 to 4 1/2 hours.
- Remove bay leaves.
- Serve with hot cooked rice, if desired.
