Southern Breakfast Bowls with Grits

Southern breakfast bowls with grits are the perfect way to start your day. They are made with grits, eggs, and sausage, and they are both delicious and nutritious.

When we make Shrimp and Grits we always have leftover grits. This is my favorite use for leftover grits. It’s super easy to make and can be customized with your favorite toppings.

  • Ham
  • Scrambled eggs
  • Cheese
  • Chives / Green onions
  • Bell Pepper

What is the best way to cook grits?

There are a few different methods you can use to cook grits, you can cook them on the stove very easily. Simply bring water or chicken broth to a boil and then whisk in the grits. Reduce the heat and simmer for 5-10 minutes, stirring occasionally, until the grits are cooked through.

What type of grits should I use?

We recommend using stone-ground grits for this dish, as they have a richer flavor and more robust texture than instant or quick-cooking grits. Stone-ground grits are harder to find in grocery stores but sometimes they are in the gourmet or organic sections. Check local stores – our Bradley’s country store has amazing grits. We see other local producers at farmer’s markets too!

If you can’t find stone-ground grits, you can also use instant or quick-cooking grits. Jim Dandy is the best we have found, I would avoid the minute grits.

How do you make grits creamy?

There are a few different ways you can make grits creamy. One method is to substitute half of the water with milk. This will give them a richer flavor and creamier texture.

Another way to make grits creamy is to stir in some butter, cream or shredded cheese after cooking. This will add even more richness and depth of flavor.

What is the ideal liquid mixture to make perfect grits?

Most packages call for all water. We have found that 1/4 water, 1/4 milk, and 1/2 chicken broth produces really great grits. You could also add a little more milk if you like them a bit creamier.

Can I make grits in an Instant Pot?

Yes! Just add the grits and water (and milk) to the Instant Pot and cook on high pressure for 5 minutes. Quick release the pressure and stir in your favorite toppings. Done!

Can I make grits ahead of time?

Grits can be made ahead of time and reheated when you’re ready to eat. Just store them in an airtight container in the fridge for up to 5 days. When you’re ready to eat, simply reheat them on the stovetop or in the microwave until warmed through.

Ingredients
  

  • 2 cups grits
  • 1 tbso butter
  • 2 eggs
  • 1/2 sausage precooked
  • 2 pieces bacon precooked
  • 1/4 cup peppers and onions diced
  • 1/4 cup shredded cheddar cheese or Mexican

Instructions
 

  • Precook the grits. You can cook the grits while the rest is being cooked.
  • In a frying pan or cast iron, add one tbsp of butter and saute the peppers and onions.
  • Meanwhile mix the eggs with milk and stir until combined.
  • Add the sausage and bacon when the onions become translucent and cook for another 2 minutes. Remove from the pan and wipe down the pan.
  • Then scramble the eggs until done.
  • In a bowl, add the grits on the bottom, then the meat and pepper mixture on top. Then add the scrambled eggs. Top with cheese and serve!

Notes

This recipe is for two servings. Simple double the ingredients to do four or triple to do six. Make extras for future meals!
Extras can be saved in the refrigerator and eaten in the next few days. If possible consume the eggs and save the meat mixture, you can always cook more eggs!
