As I sit here typing, it’s 96 degrees outside with a heat index of 104! And it’s only June – I have no idea what I’m going to do in July and August. One thing I do know for sure – I’ll be making this to keep cool! A LOT. It is so easy that the kids can make it themselves – just make sure you supervise the watermelon cutting. AND, if you rely on your brother to bring you a watermelon as I did, and he brings you one with seeds… then have a seed spitting contest while the melon is freezing!
How do you know if a watermelon is ripe?
Easy – give it a good thump or two. It should sound hollow as if you’re knocking on a door. Also, where the stem was – give it a little push, there should be some give there.
Let’s get chilly by making Watermelon Italian Ice!
Gather your ingredients and just a smidge of patience. You’ll need about 8 cups of frozen watermelon, some sugar water, and a little lemon juice. Add some mint if you like or if you’re feeling really crazy – freeze a little cucumber to add in as well!
Add all the ingredients to a blender or food processor and blitz until smooth. It may take quite a few “scrapings of the side” but trust me, this is going to come out nice and smooth. That’s it! TA DAA! spoon it up and enjoy. If – and that’s a big IF – you have leftovers, freeze them in small single serving size containers and then pop them in the microwave for about 10-15 seconds.

Watermelon Italian Ice
Equipment
- Blender or food processor
Ingredients
- 8 cups seedless watermelon cubed and frozen
- 1 cup warm water
- 1-2 Tbs Sugar
- 2 Tbs Mint fresh, optional
- Juice from 1 lemon
Instructions
- Cut the watermelon into 1 ½ inch chucks. Freeze for several hours until completely frozen.
- Stir the sugar into the warm water until completely dissolved
- Place the watermelon in a blender along with all of the other ingredients
- Blend until smooth and serve immediately
