Perfect treat during the summer heat - Watermelon Italian Ice!

As I sit here typing, it's 96 degrees outside with a heat index of 104!  And it's only June - I have no idea what I'm going to do in July and August.  One thing I do know for sure - I'll be making this to keep cool! A LOT.  It is so easy that the kids can make it themselves - just make sure you supervise the watermelon cutting.  AND, if you rely on your brother to bring you a watermelon as I did, and he brings you one with seeds... then have a seed spitting contest while the melon is freezing!

How do you know if a watermelon is ripe?

Easy - give it a good thump or two.  It should sound hollow as if you're knocking on a door.  Also, where the stem was - give it a little push, there should be some give there.

Let's get chilly by making Watermelon Italian Ice!

Gather your ingredients and just a smidge of patience.  You'll need about 8 cups of frozen watermelon, some sugar water, and a little lemon juice.  Add some mint if you like or if you're feeling really crazy - freeze a little cucumber to add in as well!

Add all the ingredients to a blender or food processor and blitz until smooth.  It may take quite a few "scrapings of the side" but trust me, this is going to come out nice and smooth.   That's it!  TA DAA!  spoon it up and enjoy.  If - and that's a big IF - you have leftovers, freeze them in small single serving size containers and then pop them in the microwave for about 10-15 seconds.
