How do you sear Ahi Tuna in a Cast Iron Pan?

Season both sides of your fish liberally with salt and drizzle with olive oil or marinade it in some Hoison sauce. Heat a pan over high heat until very hot, then add the flesh side of the fish down and let sit without touching it until well-browned and crispy, 1 or 2 minutes. Flip and let sit another minute, then transfer to a plate.

Equipment

Ingredients
  

  • 1 ahi tuna yellowfin tuna steaks
  • 1 tablespoons soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon canola oil
  • 1 teaspoon honey
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper to taste

Instructions
 

  • Pat the ahi tuna steaks dry with a paper towel.
  • Mix the soy sauce, sesame oil, honey, kosher salt, and pepper until honey is fully dissolved. Pour over the ahi tuna steaks and turn over to coat completely. Marinate for at least 10 minutes, or up to overnight in the refrigerator.
  • Heat a medium cast iron skillet until very hot
  • Add the canola oil to the hot pan. Sear the tuna for a few minutes until desired doneness.
  • 1.5 minutes on each side for rare
    2 minutes on each side for medium rare
    3 on each side for medium.
